Our winery is specialized in the production of white and rosé sparkling wines in Israel, by the traditional method used in Champagne. All the stages of the production are executed by hand, making each bottle a unique piece of craftsmanship. Every year we interpret different and unconventional grape varieties with our style of Champenoise sparkling winemaking to offer always new and unique experiences.
How we work
Small amounts of bottles are disgorged by hand “à la volée” every month, enabling our reserve wines to continue their maturation on lees. Each bottle is indeed the unique expression of the flavors of its particular maturation time. Bottle number and date of dégorgement are handwritten on each label. We leave up to you to follow the evolution of our wines with different maturation times and choose which better matches your style. The complexity and richness of our wines, accompanied by the typical freshness of sparkling wines, give you a lot of space for the creativity of pairing our wines with a great variety of dishes, and even with the whole meal.
Who we are
I am Dr. Andrea Buffa and I began working in the wine industry in Piemonte (Italy) in 2001 developing a special interest in the production of sparkling wines by the traditional Champenoise method. In 2012 I met my wife Aravà, who is from Israel, and in 2014 I moved to Israel for Ph.D. studies in Chemistry at The Hebrew University of Jerusalem. In 2015 my wife Aravà and I started the sparkling wine production project utilizing the grapes from my wife’s family estate in Givat Yeshayahu in the Judean Hills.
